Tasting Note
Concentrated black and blue fruits (blackberry, cassis) with pepper, smoked meat, leather and dark chocolate; pronounced granite/mineral note, assertive ripe tannins and a long, savory finish.

Western: grilled ribeye, roast lamb, venison, beef stew, aged cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), Chinese red-braised beef, braised beef noodle soup.
Production Method
Hand-harvested Syrah; destemmed; 3–4 week maceration, ~20 days fermentation in stainless steel; aged in a mix of concrete, stainless and oak (partly new); light filtration.
