Tasting Note
Concentrated Pinot Meunier: orchard fruit, apricot and brioche with chalky, saline minerality, layered texture and a long, perfumed finish.

Food Pairing
Oysters, scallops, grilled salmon, roasted chicken, pork belly; Asian: sushi/sashimi, tempura, Cantonese roast duck, dim sum.

Production Method
100% Meunier; fermented (partly) in oak, bottled under natural cork for prise de mousse, aged ~48 months on lees, disgorged with 2 g/L dosage.

Domaine Pierre Paillard (Bouzy-based family domaine, ~11 ha) sources old Meunier vines (Les Dessus de Monthouzons, planted 1963) on thin clay over chalk soils.
