Tasting Note
Powerful, chalky Blanc de Blancs: citrus, white pear, crushed stone, brioche and honeysuckle; creamy mousse with saline, crystalline finish and long, focused minerality.

Production Method
100% Chardonnay from a single lieu-dit (Les Mottelettes); massal-selection old vines. Fermented and aged in 350L oak barrels, malolactic performed, ~48 months on lees, disgorged (Jan 2024), dosage ~3 g/L; unfined/unfiltered.

Pierre Paillard is an historic Bouzy Grand Cru grower (family estate, c.11 ha), now run by the Paillard brothers; focusing on old-vine plots, organic practices and single-vineyard cuvées. Les Mottelettes planted c.1960/1961 (massal selection).
