Tasting Note
Fine, pillowy mousse with aromas of red apple, raspberry, toasted almond, dried apricot and citrus zest; saline, chalky minerality and a creamy, precise structure leading to a long, saline finish.

Western: oysters, scallops, lobster, smoked salmon, roast chicken, creamy mushroom risotto, soft cheeses (Brie). Asian: sushi/sashimi, tempura, seared tuna/aji, miso-glazed black cod, Peking duck, pork belly.
Production Method
Méthode traditionnelle; 100% Pinot Noir vinified partly in oak (350L/225L), indigenous yeasts, malolactic fermentation, 48–60 months on lees and disgorged with zero/very low dosage (Extra Brut/Brut Nature).
