Tasting Note

Fresh apple and pear with cherry and red-berry accents, chalky minerality and saline precision; light brioche and spice, brisk acidity, fine mousse and a persistent, hunger-inducing finish.

Pâté de campagne, roast chicken, grilled lobster, oysters, goat cheese; Asian: sushi/sashimi, tempura, dim sum, pork belly, light spicy Thai or Vietnamese salads.


Production Method

Blanc de Noirs from first press; vinified in stainless steel, underwent alcoholic and malolactic fermentation, kept on lees ~8 months, secondary bottle fermentation and ~60 months sur lattes; bottled extra‑brut (low dosage ~1.8–2 g/L).

Family-owned Pierre Paillard of Bouzy (historic Grand Cru estate), run by Antoine & Quentin Paillard; ~11 ha on Bouzy, converting to organic; Les Maillerettes is a tiny 0.32 ha parcel planted c.1970 used for massal selection.
