Tasting Note
Bright, zesty sauvignon with grapefruit, lime leaf, green chilli and passionfruit notes, faint white guava and wet-stone minerality. Racy acidity, medium body and a subtle saline finish.

Oysters, ceviche, grilled prawns, seared scallops, goat-cheese salad, smoked salmon; Asian: sushi/sashimi, ceviche-style dishes, Vietnamese spring rolls, Thai green papaya salad, light seafood curries.
Production Method
Hand-harvested grapes from Zapallar. Cold maceration (12–24h), controlled low-temperature fermentation (10–12°C) in stainless steel, 6–8 months on fine lees, unoaked, filtered and bottled under screwcap.

Produced by Viña Montes (founded 1987 by Aurelio Montes et al.). Single-vineyard at ~680m, 7 km from the Pacific; clay-rich soils and cool maritime influence produce high-acid, mineral whites.
