Tasting Note
Deep purple-red with aromas of cherries, blackberries and black pepper; notes of mocha, clove and tobacco. Generous entry, smooth velvety tannins, lively freshness and a long, fruity finish.

Food Pairing
Western: grilled or roasted red meats, steak, pasta with ragù, aged cheeses. Asian: Peking duck, Korean BBQ, char siu, miso-glazed dishes, spicy Sichuan beef.

Production Method
Varietals fermented separately in small steel tanks; malolactic in steel. Aged ~10 months partly in used Ornellaia barriques and partly in concrete to balance structure and fruit.
