Tasting Note
Bright ruby with purple highlights. Aromas of pink pepper, cypress berries, dark cherry, plum and violet. Elegant palate with lively acidity, ripe dark fruit, spice, cedar and fine tannins; savory, persistent finish.

Food Pairing
Western: grilled ribeye, roasted lamb, braised short ribs, beef bourguignon, mushroom risotto, aged pecorino. Asian: Korean BBQ (bulgogi), Chinese red-braised pork, Peking duck, soy-braised short ribs, teriyaki beef, moderate Szechuan dishes.

Production Method
Hand‑harvested and double-sorted. Fermented in stainless steel (26–30°C) with 10–15 day maceration; malolactic started in steel and finished in barrels. Aged ~15 months in French oak (≈25% new), assembled and returned to barrel, bottled after further cellar aging.
