Tasting Note
Deep garnet; blackcurrant, plum and blueberry with notes of tobacco, cedar, violets and graphite. Medium–full-bodied, polished, fine-grained tannins, saline freshness and a long, spicy finish.
Food Pairing
Western: roast lamb, ribeye, beef bourguignon, roasted duck. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), spicy Szechuan beef, lamb skewers.
Production Method
Hand-harvested; traditional vinification with ~20 days maceration; aged 16 months in French oak barriques (≈45% new).
