Tasting Note

Deep black-fruit core of blackberries, black cherry and mulberry with cedar, tobacco, Provencal herbs and spice. Medium–full body, firm grainy tannins, bright freshness and a long mineral-tinged finish.

Roasted lamb, ribeye or prime rib, beef stews, mushroom risotto, aged hard cheeses; Asian: Peking duck, char siu, Korean BBQ (galbi), braised beef, miso-glazed eggplant.


Production Method

Hand-harvested, fermented in temperature-controlled stainless-steel vats; aged ~15 months in French oak (about 45% new barriques).
