Tasting Note
Concentrated red and dark berries (cassis, plum) with spice, tobacco, vanilla and floral lift. Silky, full-bodied palate with ripe fruit, vibrant acidity, polished tannins and a long savory finish.

Food Pairing
Western: grilled steak, roast lamb, venison, braised beef, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), spicy Szechuan beef, char siu pork.

Production Method
Hand-harvested; separate temperature-controlled fermentations and extended maceration; aged ~18 months in small French oak barrels (barriques) with additional bottle aging.
