Tasting Note
Crisp crimson with wild strawberry, pomegranate, Bing cherry and cedar on the nose. Palate shows red plum, cherry-cola, rhubarb and baking spices, a touch of cocoa on the finish, bright acidity and lingering length.

Food Pairing
Western: roast duck, grilled salmon, pork chops, mushroom risotto, soft cheeses. Asian: Peking/roast duck, char siu, miso‑glazed cod, teriyaki salmon, Korean BBQ (lighter cuts).

Production Method
Fruit sourced from multiple California sites; fermented, blended and aged 8 months in French oak (32% new) before bottling.
