Tasting Note
Dark crimson core with aromas of currant, blackberry, anise, lavender and brioche. Flavors of mixed-berry pie, sarsaparilla, cola and blackcurrant; chalky black-tea tannins and baking-chocolate notes finish with sweet oak.

Food Pairing
Grilled ribeye, T-bone or rack of lamb, braised short ribs, aged cheddar or Comté; Korean BBQ (bulgogi), char siu or Cantonese roast pork, Sichuan-style beef, teriyaki steak.

Production Method
Each variety fermented separately, matured ~16 months in French oak (52% new), then blended and bottled as a Bordeaux-style Napa red.

Orin Swift (founded by Dave Phinney in 1998). Papillon sources fruit from top Napa sites including Monte Rosso, Stagecoach, Lewelling, Morisoli, Taplin and Indian Joe; brand owned by E. & J. Gallo since 2016.
