Tasting Note
Dense, neon-crimson wine with aromas of blackberry, kirsch, coastal sage and roasted fig. Palate shows black plum, cassis, toffee, sweet vermouth and mint, finishing with ripe, firm tannins and a mildly drying, long finish.

Food Pairing
Grilled ribeye, roast lamb, beef short ribs, aged cheddar; Asian: Korean BBQ (bulgogi), char siu, teriyaki steak, Sichuan-style beef, wagyu yakiniku.

Production Method
Varietals fermented separately, blended to house style; aged 13 months in French oak (47% new) before bottling.
