Tasting Note
Concentrated cassis, blackberry and raspberry preserves with rhubarb, toffee, black tea, licorice and chocolate-covered espresso bean; ultra-soft dusty tannins and a long, lingering finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan pepper beef, braised beef with black bean sauce.

Production Method
Fermented as a barrel selection and aged in French oak (2019: 13 months, 43% new) to build structure and polish tannins.
