Tasting Note
Concentrated blackcurrant, blackberry and black plum with notes of licorice, dark chocolate, sandalwood and dried herbs. Full-bodied, layered, with dusty/soft tannins and a long, chocolate-tinged finish.

Food Pairing
Grilled ribeye, braised short ribs, rack of lamb, aged cheddar, mushroom risotto; Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, Sichuan beef or rich mapo tofu.

Production Method
Small-lot Napa Cabernet vinification; aged in French oak (2019: ~13 months, ~43% new) with barrel selection from premium blocks.
