Tasting Note
Dark purple core with a neon ruby rim. Aromas of black plum, cacao, black pepper, dried porcini and forest floor. Palate shows blueberry preserves, tarragon, balsamic glaze and anise; bright lift and an umami finish reminiscent of miso/eggplant yakitori. Full-bodied with ripe tannins.
Food Pairing
Western: grilled ribeye, roasted lamb, BBQ brisket, aged cheddar, mushroom ragout. Asian: Korean BBQ, teriyaki beef, miso-glazed eggplant, yakitori, char siu, spicy Szechuan braised beef.
Production Method
A state-wide blend assembled from multiple California appellations. Fermented, trial-blended and aged eight months in French oak (31% new) before bottling.
