Tasting Note
Opaque purple core with muddled blue/blackberry, ripe plum and boysenberry, framed by dark chocolate, leather and sarsaparilla. Plush, grippy tannins with blackcurrant and mocha on a long, savory finish.

Food Pairing
Western: grilled ribeye, BBQ short ribs, braised lamb, aged cheddar. Asian: Korean BBQ (bulgogi), miso-glazed eggplant, char siu pork, spicy Sichuan beef.

Production Method
Blended from multiple California appellations; fermented and aged ~8 months in French oak (≈21% new), then assembled into final proprietary blend.
