Dark garnet with bramble, blackberry, dark plum, hoisin and espresso notes. Full-bodied, rich mid‑palate of black fruit, spice and earth, finishing massive with soft drying tannins and lingering savory spice.
Food Pairing
Grilled ribeye, braised short ribs, barbecued pork, aged cheddar; Asian: char siu (Cantonese BBQ), Korean bulgogi or galbi, hoisin-glazed duck, spicy Sichuan beef.
Production Method
Fruit harvested from California sites, fermentations handled separately then blended; aged ~10 months in French oak (45% new) before bottling. Limited production release.
