Tasting Note
Dense dark berry and bramble fruit—blackberry, raspberry, blueberry—plus pepper, cocoa, espresso and sweet oak. Full-bodied, velvety texture, ripe dusty tannins and a long, chocolate-tinged finish.

Food Pairing
Grilled flank steak, barbecued ribs, roasted lamb, beef bourguignon; Asian: char siu, Korean BBQ bulgogi, spicy Sichuan beef, hoisin-glazed duck.

Production Method
Blend fermented separately then assembled; matured ~7–8 months in French oak (c.30–35% new) before bottling.
