Tasting Note
Concentrated black and red fruits (black cherry, blackberry, raspberry) with violet, spice, leather and savory/meaty notes. Polished yet muscular, firm slightly drying tannins, mineral backbone and a long, persistent finish.
Food Pairing
Western: roast beef, lamb, venison, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu, Korean BBQ (bulgogi), shiitake/soy braised beef, hot pot with beef and mushrooms.
Production Method
Hand-harvested Pinot Noir from old vines; partial whole-cluster fermentation with 2–3 week maceration in small open vats, native yeasts, aged ~16–20 months in French oak (portion new). Minimal intervention to preserve terroir.
