Tasting Note
Perfumed cranberry and redcurrant with rose petal, sandalwood and spice. Chalky minerality, vibrant acidity and fine satiny tannins; medium-bodied with a precise, saline-driven finish and long mineral aftertaste.
Food Pairing
Western: roast duck, coq au vin, beef bourguignon, lamb, wild mushroom risotto, aged soft cheeses. Asian: Peking duck, char siu, soy- or miso-glazed salmon, shiitake stir-fry, teriyaki beef.
Production Method
Hand-harvested Pinot Noir; vintage-dependent partial whole-cluster fermentation; élevage in French oak barrels (c.14–18 months, variable % new); low yields and minimal chemical inputs.

Les Cazetiers: steep south‑east slope in Côte Saint-Jacques; gravelly clay‑chalk soil with white marl. Producer Olivier Bernstein (Beaune) farms old vines (c.80 years on portions) and focuses on low yields and careful élevage.
