Tasting Note
Elegant, terroir-driven Pinot Noir: red and black cherry, violet, baking spice, subtle smoke and graphite, with firm mineral backbone, fine-grained tannins and a long, saline finish.

Western: roast duck, mushroom risotto, coq au vin, beef bourguignon, grilled salmon. Asian: Peking duck, miso-glazed black cod, char siu pork, Korean BBQ short ribs, mushroom hot pot.

Production Method
Hand-harvested old-vine fruit; careful sorting, partial whole-cluster fermentation, matured in French oak barrels; low yields and minimal intervention to emphasize terroir.
