Tasting Note
Light-alcohol Syrah with savory reduction giving dark cherry, dewberry and bramble, black olive tapenade, pepper and bay leaf; gentle fine tannins, mineral/schist undertow and a svelte, savory finish.
Food Pairing
Grilled lamb chops, roast beef, mushroom risotto, braised short ribs (Western); Korean BBQ (galbi), char siu or charred teriyaki beef, Sichuan pepper beef, yakitori (Asian).
Production Method
Hand-harvested; native-yeast whole-bunch fermentation (portion carbonic); short maceration; basket-pressed to seasoned French oak; ~5 months maturation; bottled unfined and unfiltered with minimal SO2.
