Tasting Note
Bright pomegranate, redcurrant and sour cherry with herbal/medicinal notes of fennel, sarsaparilla and mint. Silky texture, fine-grained tannins, mineral backbone and a peppery, lightly tannic finish—light-bodied yet concentrated and elegant.

Production Method
Wild/indigenous fermentation with carbonic maceration and a mix of whole-cluster and destemmed ferments; extended maceration, pressed to neutral oak barriques; minimal SO2; bottled without fining or filtration.

Ochota Barrels, founded by Taras and Amber Ochota in Adelaide Hills, makes low-intervention natural wines. Taras championed Gamay plantings; Amber and their team continue production after his 2020 passing.
