Tasting Note

Bright pomegranate, redcurrant and sour cherry with herbal/medicinal notes of fennel, sarsaparilla and mint. Silky texture, fine-grained tannins, mineral backbone and a peppery, lightly tannic finish—light-bodied yet concentrated and elegant.

Food Pairing

Western: charcuterie, herby sausages, roasted pork, duck confit, mushroom risotto, roast chicken, Camembert. Asian: Korean BBQ, Chinese char siu, Thai basil pork, Japanese yakitori, Vietnamese bun cha, richer noodle dishes.

Production Method

Wild/indigenous fermentation with carbonic maceration and a mix of whole-cluster and destemmed ferments; extended maceration, pressed to neutral oak barriques; minimal SO2; bottled without fining or filtration.
