Tasting Note

Bright ruby with pink florals, raspberry, rhubarb and red cherry, edged by fennel and almond meal. Light, perfumed and energetic with fine tannins, brisk acidity and a succulent, slightly herbal finish.

Western: roast pork, roast chicken, mushroom risotto, tomato-based pizza, charcuterie. Asian: teriyaki salmon, hoisin/char siu pork, Peking/duck pancakes, miso-glazed fish, Korean BBQ pork.


Production Method

Hand-harvested, wild/indigenous ferment in open-top fermenters with mostly destemmed fruit and some whole-bunches/stalks; gently pressed to old French barriques, short élevage, minimal SO2, unfined and coarse filtered.

Ochota Barrels — founded by Taras & Amber Ochota (c.2000). Focus on old bush vines, low-intervention farming. 'The Mark of Cain' sourced from a Piccadilly Valley vineyard planted in 1985.
