Tasting Note
Bright pink-floral aromatics with cherry, wild strawberry, rhubarb, feijoa and fennel seed. Crunchy natural acidity, fine tannins, saline minerality and a mid-palate of red berries and rhubarb, finishing energetic and slightly savory.

Roasted duck with cherry glaze, pork belly, mushroom risotto, grilled salmon, charcuterie and soft cheeses; Asian: Korean BBQ (bulgogi), char siu, Thai larb, Japanese yakitori, umami-rich mushroom ramen.
Production Method
Hand-picked; ~90% destemmed, ~10% whole-cluster. Open-top fermenters with gentle punchdowns, basket-pressed to used French barriques for ~5 months; bottled unfined and unfiltered with minimal SO2.
