Tasting Note
Perfumed red-fruit core of wild strawberry, pomegranate and satsuma plum with thyme, white pepper and savoury garrigue. Light-coloured, medium-bodied, nervy acidity and fine, silky texture; bright, fragrant and thirst‑quenching.
Food Pairing
Western: roast lamb, pork belly, charcuterie, mushroom risotto, tomato-based pizza. Asian: Korean BBQ, char siu, teriyaki chicken, yakitori, mildly spicy Sichuan eggplant, miso-glazed salmon.
Production Method
Hand-harvested from old, certified-organic vines. Cold-soaked, wild yeast ferments with a high proportion of whole bunches, gentle hand plunging, basket-pressed to seasoned French barriques and briefly aged. Minimal SO2, unfined and lightly filtered.
