Tasting Note
Light garnet; bright red fruits (raspberry, blueberry) with orange-peel, white-pepper and clove. Saline, nervy acidity, creamy mid-palate, fine sandy tannins and a crisp, mouthwatering finish.

Western: roast lamb, herb-roasted pork, pizza with spicy salami, grilled vegetables, charred aubergine. Asian: char siu or Cantonese roast pork, Korean BBQ (bulgogi), miso-glazed eggplant, duck pancakes, Thai basil pork.
Production Method
Hand-harvested; cold-soaked ~5 days; ambient/wild-yeast fermentation with a high % whole-cluster; gentle foot-stomping and plunging; basket-pressed to old French oak for months; minimal-intervention, bottled unfined/unfiltered with low SO2.
