Tasting Note
Perfumed red-fruit (wild strawberry, raspberry, sour cherry) with savory garrigue, white pepper and thyme; fine, satiny tannins, bright acidity and a medium-bodied, nervy, almost Pinot-like texture.

Food Pairing
Western: roast pork, grilled lamb, duck confit, mushroom risotto, charcuterie. Asian: Peking duck, char siu, Korean BBQ (galbi), mushroom ramen, mildly spiced Sichuan dishes.

Production Method
Hand-harvested; high whole-bunch inclusion, native yeast fermentation, short skin contact, basket-pressed and aged briefly in old French barriques; minimal SO2, unfined/unfiltered.
