Tasting Note
Tightly wound cool-climate Chardonnay: grapefruit, nectarine, mealy Granny Smith, honeysuckle, gunflint and beeswax, with Meyer lemon rind. Taut, svelte texture and a long, elegant finish.

Food Pairing
Western: roast chicken, butter-poached lobster, grilled prawns, oysters, creamy pasta. Asian: miso-glazed cod, sashimi/sushi, tempura prawns, Vietnamese spring rolls, light Thai grilled fish.

Production Method
Hand-harvested, whole-bunch basket-pressed to French oak (mix of seasoned and ~10% new). Indigenous yeast fermentation, weekly battonage, ~6 months barrel aging, minimal SO2, light filtration, unfined.
