Tasting Note
Taut, cool-climate Chardonnay: grapefruit, nectarine, Granny Smith apple, beeswax and meyer-lemon rind; svelte, mineral-driven palate with bright acidity and a long, precise finish.

Western: grilled/poached white fish, lobster, roast chicken, shellfish, goat cheese tarts. Asian: delicate curries (yellow/lemongrass), sashimi, abalone/seafood in soy-butter, tempura, light Thai salads.

Production Method
Hand‑harvested, whole‑bunch basket‑pressed to French oak; native fermentation, weekly bâtonnage; ~6 months in 90% seasoned/10% new barriques; minimal SO2, unfined/lightly filtered, no/limited MLF.
