Tasting Note
Perfumed, floral pinot with crushed petals, wild cherry, raspberry and red currant layered over forest-floor, garrigue and savory/medicinal spice. Silky texture, bright acidity, fine crunchy tannins and a long, savory finish.

Western: roast duck, mushroom risotto, pork belly, grilled salmon. Asian: miso‑glazed black cod, char siu (BBQ) pork, mushroom soba, shoyu ramen.

Hand-harvested fruit; native yeast fermentation; 100% whole-bunch; gentle hand plunging; basket-pressed to seasoned French barriques; minimal SO2; unfined and unfiltered.
