Tasting Note
Coastal, honeyed malt with dried fruit, orange peel, gentle peat smoke, sea-salt brine, caramel and toasted oak; long, slightly spicy finish with coffee and malt-biscuit notes.

Food Pairing
Western: seared scallops, smoked salmon, roasted lamb, aged cheddar, dark chocolate. Asian: miso-glazed black cod, char siu pork, teriyaki beef, Korean barbecue, soy-based dipping sauces.

Production Method
Double-matured: initial aging in American/European oak, then finished several months in re-charred American oak casks seasoned with Montilla Fino sherry.
