Tasting Note
Maritime nose of sea breeze, citrus, sugarcane and mango. Oil-smooth palate of tropical fruit, salted caramel, toffee and warm spice. Finish is spicy with light salinity.

Food Pairing
Western: grilled scallops, smoked salmon, roast pork belly, blue cheese, dark chocolate. Asian: jerk-style or teriyaki-glazed chicken/salmon, Thai green curry, Korean BBQ, spicy Sichuan dishes.

Production Method
Matured 11 years, finished in Caribbean pot-still rum casks and bottled at natural cask strength (58% ABV).
