Tasting Note
Medium bright cherry red. Aromas of red cherry, cedar, violets and a touch of tomato leaf. Medium-bodied palate of red and blue fruits, very fine tannins, balanced acidity and a savoury, refreshing finish.

Food Pairing
Western: grilled steak, roast lamb, braised beef, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, Sichuan beef, miso-glazed aubergine, teriyaki beef.

Production Method
Traditional fermentation on skins with twice-daily pump-overs (~4 weeks), followed by ~15 months in 225L French oak barrels.
