Tasting Note
Fragrant violet and bright red cherry with winter strawberry, lingonberry and fig, edged by autumn leaf, raw cacao and orange-bitter spice. Powdery, fine tannins, crunchy acidity and a pumice-like minerality lead to a long, savory finish.
Food Pairing
Roast lamb, duck (Peking or roast), mushroom risotto, pork belly, grilled salmon; Asian pairings: char siu, miso‑glazed salmon or aubergine, Korean BBQ pork, yakitori, teriyaki chicken.
Production Method
Hand-harvested single-vineyard fruit; indigenous yeast fermentations in small stainless tanks with ~15% whole-bunch; aged ~12 months in French barriques (c.20–30% new). Organically managed, minimal-intervention approach.
Vineyard Info
Novum is an artisanal Marlborough project led by Will and Rachel Hoare, focusing on single-parcel Pinot Noir from their Quarters Vineyard; organic, close-planted vines and low-yield viticulture to concentrate flavour.
