Tasting Note

Bright red and dark cherry, raspberry and plum with earthy forest-floor, spice and subtle smoked-meat notes. Silky texture, grainy tannins and bright acidity lead to a refined, savory finish.


Food Pairing

Western: roast duck, mushroom risotto, herb-roasted pork, grilled salmon. Asian: Peking duck, miso-glazed salmon, char siu pork, Korean BBQ short ribs, shiitake and tofu stir-fry.


Production Method

Fruit sourced from select Southern Valley sites; 100% destemmed, indigenous yeast fermentations in small vats; aged ~12 months in French barriques (≈30% new). Sustainable/organic farming practices.
