Dense dark berry and spicy aromatics with savoury molasses notes. Round, full-bodied palate with concentrated black fruit, pepper and clove; firm tannins and a long, balanced finish. Powerful yet stylish, suitable for medium-term cellaring.
Food Pairing
Western: aged rump or T-bone steak, braised lamb shank, osso buco, roasted mushroom dishes. Asian: Korean BBQ (galbi), Cantonese char siu, Sichuan beef, rich Indonesian or Malaysian beef rendang.
Production Method
Hand-picked Shiraz fermented in small open vats with manual pigeage, pressed in a traditional basket press, matured ~18 months in 300L French and American oak (approx. 30–35% new). Bottled on-site.
Vineyard Info
Sourced from the Borrett family's '20 Rows' block on the historic Langhorne Creek floodplain; low-yielding, old vines on deep alluvial clay loam producing concentrated fruit. Produced by Noon (Drew Noon).
