Tasting Note
Dense black and blue fruit (blackberry, plum) with spice, molasses and savory/soy notes. Very full-bodied, concentrated with firm savory tannins, rounded mid-palate and a long, mouth-coating finish.

Western: slow‑braised lamb shank, osso bucco, grilled T‑bone or aged rump steak, roasted eggplant with hummus. Asian: Korean BBQ (bulgogi), Chinese char siu or braised beef with black bean, Sichuan pepper beef, grilled lamb skewers/yakitori.
Production Method
Hand-harvested Shiraz; fermented in small open vats with hand plunging, pressed in traditional basket presses and matured 18 months in 300L French and American oak (≈30–35% new). Bottled under screwcap.

Noon Winery (Drew & Rae Noon) sources fruit from the Borrett family '20 Rows' block on the Langhorne Creek floodplain. Family-run micro‑winery, limited annual production and history back to the 1990s.
