Tasting Note
Perfumed red berries and kirsch with spice, woodsy undergrowth and cardamom; plush, silky mid‑palate, high alcohol yet balanced, firm tannins and a long, lingering finish.

Western: grilled lamb chops, charred ribeye, chorizo, aged cheddar, Moroccan lamb tagine. Asian: Korean BBQ (bulgogi), char siu or roasted pork, Peking duck, Sichuan braised beef, miso‑glazed eggplant.

Production Method
Estate-grown, hand‑picked fruit; small open‑vat fermentations with manual pigeage; gentle basket pressing; matured ~18 months in seasoned 300L French & American oak and large oak casks; minimal intervention.
