Tasting Note

Rich, umami-driven sake with ripe melon and nectarine, toasted grains, gentle lactic earthiness and clean saline finish. High energy, balanced bitterness, and bright acidity under a full, mouthcoating profile.

Production Method

Traditional yamahai fermentation; muroka (unfiltered), nama (unpasteurised) and genshu (undiluted). Rice polished ~55%; yeast: Kanazawa No.14. Batch release (2020 vintage).
