Tasting Note
Aromatic Junmai Daiginjo: acacia honey, ripe banana, dried flowers, white peach, green melon and subtle tropical notes. Seamless, creamy texture with bright acidity, mineral-driven umami and a long, clean, dry finish.

Production Method
Junmai Daiginjo brewed from Yamada Nishiki, selected as the top tank by Toji Noguchi; aged at low temperature and released largely as unpasteurised/limited-edition namazake with careful long-term maturation.
