Tasting Note
Five 100ml expressions: Junmai Daiginjo (Yamada Nishiki) shows floral, melon and pear; Yamahai series (Omachi, Aiyama, Miyamanishiki, Gohyakumangoku) deliver earthy umami, lactic/cheesy notes, roasted rice and savory, with a medium–long finish.

Production Method
Contains one Junmai Daiginjo (50% polish) and four Yamahai-method brews; small-batch artisanal fermentation using local spring water. Some Yamahai bottles list added brewing alcohol; each is bottled in 100ml miniatures for tasting.

Noguchi Naohiko Sake Institute preserves master brewer Naohiko Noguchi’s techniques; founded to continue his legacy in Kanagaso (Komatsu), Ishikawa. Noguchi is a celebrated toji who helped revive the yamahai method.
