Tasting Note
Light, refreshing white with white-flower, citrus and stone-fruit notes, a beeswax/honey touch and saline minerality; very bright acidity and a clean, lingering finish.

Food Pairing
Western: grilled or roasted white fish, cod (bacalhau), roast chicken, salads, soft/hard cheeses. Asian: sushi/sashimi, sashimi with citrus, tempura, steamed fish with ginger and scallion, light Chinese seafood dishes.

Production Method
Hand-harvested Dão grapes; fermented in stainless steel with little/no oak influence to preserve freshness; bottled by Niepoort at Quinta de Baixo.
