Tasting Note
Fresh red cherry and wild strawberry fruit with rose‑petal florals, subtle spice and saline chalky minerality. Bright, incisive acidity, fine silky tannins and a long, precise finish. Elegant and ageworthy.
Food Pairing
Western: roast kid/goat, oven‑baked cod, charcuterie, roasted duck, aged cheeses. Asian: grilled pork belly (samgyeopsal), char siu, spicy Sichuan tofu, teriyaki duck, braised pork belly (hong shao rou).
Production Method
Part vinified in open lagares and part in stainless steel; ~3–4 weeks skin contact; malolactic in old 2500L wooden vats; extended ageing (≈40–48 months) in large old wooden casks; bottled unfiltered.

Made by Niepoort at Quinta de Baixo from centenary Baga vines on calcareous clay soils. Dirk Niepoort sources low‑yield old‑vine fruit and combines traditional techniques with careful cellar ageing.
