Tasting Note
Bright red cherry, raspberry and violet with light spice and herbal lift; elegant, fresh acidity, silky light tannins and a long, persistent finish.

Food Pairing
Western: roast duck, grilled salmon, pork tenderloin, mushroom risotto, roasted chicken. Asian: miso-glazed salmon, teriyaki chicken, Peking duck, char siu pork, shiitake stir-fry.

Production Method
Hand-harvested, whole-bunch (foot‑trod) into stainless steel; spontaneous fermentation, malolactic in barrel; aged ~10–16 months in barrels; bottled without fining, lightly filtered.
