Tasting Note
Deep ruby with aromas of black cherry, plum, figs, dark chocolate and spice. Full-bodied, concentrated palate with firm but supple tannins, bright acidity and a long, dry, spicy finish.

Western: dark chocolate desserts, blue cheese, aged cheddar, roast lamb or venison. Asian: Chinese red‑braised pork (hong shao rou), Peking duck, mooncakes or black sesame desserts, soy‑braised beef.

Production Method
Hand-harvested, foot-treaded in granite lagares; fermentation stopped with grape spirit; aged 4–6 years in large old oak tinas/barrels; bottled under natural cork.
