Tasting Note
Golden colour; aromas of dried orange peel, figs, toasted almonds and walnuts with floral notes. Palate is fine, balanced and sweet with vibrant acidity and a long, elegant finish.
Food Pairing
Western: blue cheeses (Roquefort), foie gras, almond tart, crème brûlée, roasted pork. Asian: Peking duck, mango sticky rice, coconut-based desserts, Chinese mooncakes, glazed char siu pork.
Production Method
White grapes undergo extended skin maceration and foot treading; fermentation is stopped with aguardente vínica. Aged first in large oak vats then in traditional oak casks for 7–15 years; selected parcels are blended to a 10-year style.
