Tasting Note
Bright red cherry and pomegranate with violet and floral lift, wet earth and Earl Grey tea undertones. Racy acidity, refined tannins, saline edge and cocoa-nib complexity leading to a long, savory finish.
Food Pairing
Roast duck, grilled salmon, pork loin, mushroom risotto; Asian: miso‑glazed black cod, soy‑ginger salmon, char siu pork, shiitake and tofu stir‑fry.
Production Method
Hand-harvested grapes from multiple Willamette sites; cold soak, slow native-yeast fermentations with gentle pump-overs/punchdowns. Aged 15–18 months in French oak (≈33% new). Bottled unfined and unfiltered.
Vineyard Info
